Falafel Wraps with Beetroot Hummus

INGREDIENTS

1/4 cup plain Greek Yoghurt

1 teaspoon harissa paste

200g of Hummus mixed with beetroot dip

1 large Zucchini cut into battons

Zaman Fafafel’s

Lettuce leaf mix

Coriander

Sliced Spanish Onion

Instructions

1. Place yoghurt and harissa in a small bowl. Gently stir to create a marbled effect.

2. Spread each Lebanese bread with hummus.

3. Top each with salad leaves, zucchini, onion and 3 felafels. Dollop with yoghurt mixture.

4. Sprinkle with coriander.

5. Wrap to enclose. Serve immediately.
